Today, I want to share a staple recipe that everyone should have in their arsenal – cheesy potatoes! I’m not sure why the combination of cheese and potatoes is so irresistible but if you figure it out, you let me know. These potatoes are made with a can of Campbell’s soup which is different, I know. I was skeptical when I first saw it, but quickly converted when I tasted them. These are so easy to throw into the oven. The hardest part is peeling the potatoes – I promise.

Ingredients for Easy Cheesy Potatoes
- 6-8 medium potatoes (I use red always)
- A 10.75 oz can of Campbell’s Cheddar Cheese Soup
- 1 ¼ cup milk
- Salt and pepper
- 4 oz shredded cheese (I use cheddar but you could use any kind)
- Crumbled bacon (optional)
Instructions for Easy Cheesy Potatoes
Preheat oven to 350°F and coat a baking dish with cooking spray. Peel and slice the potatoes. Whisk together the soup and milk in a bowl. Spread a little of the mixture in the bottom of the baking dish to keep the bottom from burning. Make a layer of potatoes across the dish. Salt and pepper the layer and pour some of the mixture on them. Repeat this process until the potatoes and mixture are used. Salt and pepper each layer of potatoes. Cover the baking dish with aluminum foil and bake until potatoes are soft. It typically takes my oven around 45 minutes. Remove from oven and top with cheese and the optional bacon if you are feeling naughty!
